2 slices thick sliced Bacon, cut into 1/2 inch pieces
Preheat oven to 400 F
Dice peppers and onions and mix throughly with breadcrumbs. Mix in clam juice, butter, olive oil , salt and pepper. Open clams , place a layer of breadcrumb mixture on each clam. Top each with a piece of bacon. Add a small amount of water in a baking pan , place clams on top and bake 8-10 mins until bread crumb mixture is golden brown and the bacon is crisp.
