These tomatoes are great to have on hand to serve on their own or made into a pasta sauce.


  • 12 Plum Tomatoes
  • Salt & Pepper
  • Sugar
  • Extra-Virgin Olive Oil

Preheat oven to 275

Cut tomatoes in half and lay cut side up on a baking sheet. Sprinkle with salt, pepper and a few grains of sugar on each half. Drizzle with olive oil .

Roast for 2 1/2 hours or until tomatoes are consentrated and caramelized.

Serve at room temperature topped with some minced garlic , basil and olive oil. Just make sure you have some good crusty bread to soak up all the juices.
