Make sure you have the candles and wine ready when serving this romantic meal.
1/4 cup Flour
Salt and Pepper
2 Sole Fillets
3 tablespoons good quality butter
3 tablespoons freshly squeezed lemon juice
2 teaspoons rinsed capers
2 tablespoons chopped Italian parsley
Mix flour with salt and pepper. Heat 2 tbls butter in a saute pan over med. heat. Dredge sole fillets in seasoned flour and add to pan. Saute for about 2 minutes until golden , carefully turn fillets over . While the second side is cooking add lemon juice and capers. Let cook for about another 2-3 mins.
Remove fillets from pan and add the additional tbls of butter and parsley. As soon as the butter melts spoon sauce over fish and serve with potatoes and lemon . You can also serve some asparagus, sauted spinach or some arugula salad on the side.
Roasted Potatoes
6 small Yukon Gold Potatoes
Olive oil
2 tsp butter
Finely chopped herbs and/or a little minced garlic
sea salt
Preheat oven to 350. Cut potatoes in half , put them into a small roasting pan , sprinkle with sea salt and drizzle with olive oil. Roast potatoes for about 30 mins , depending on the size, until tender . Toss with butter and herbs, and if you like, a little more salt.
