This makes a great appetizer or it can be a main course served in individual au gratin dishes.. I use shrimp and scallops but you can always substitute lobster meat or king crab for a more elegant meal.
4 Tbls butter , softened
4 cloves minced garlic
2 shallots, minced
3 tbls minced parsley
Juice of 2 lemons
4 tbls olive oil
1/2 panko bread crumbs
4 tbls white wine
1 lb scallops
1 lb medium shrimp, peeled and deveined
Pre heat oven to 375.
Mix butter , garlic , shallots , parsley , lemon juice, olive oil,panko , salt and pepper until well blended. Place shrimp and scallops into a baking dish , or divide evenly into 4 gratin dishes. Pour wine over and then spoon the panko mixture over the top. Bake 15-20 min until topping is golden brown. Serve with lemon slices .
