I like to put out bowls of homemade guacamole, salsa, grated Monterey Jack Cheese and shredded lettuce so my guests can fix their own. 

  • 1 1/2 - 2 lbs skirt steak
  • 1/3 cup soy sauce
  • 2 tbls olive oil
  • 2 cloves garlic, chopped
  • 1 jalapeno , chopped
  • 1 small onion , chopped
  • a few spigs of fresh thyme
  • fresh ground black pepper
  • Flour tortillas

Place all ingredients  ( except the tortillas ) in a zip lock bag. Let marinate in the refrigerator for 2 hours . Bring to room temperature and grill until medium rare about 4 mins per side. Let rest for 5 mins . Warm the tortillas on the grill about 30 seconds per side. Slice teh steak against the grain . Pile on tortillas , top with guacamole, salsa , lettuce , and shredded jack cheese,
