Always keep a bag of edamame pods in the freezer for a quick appetizer. Goes really well with a lychee martini.
1 bag of frozen edamame in pods
1 tbls good quality extra virgin olive oil
Himalayan pink salt , or any sea salt preferably in a grinder
Bring a large pot of water with a tablespoon of sea salt to a boil. Put edamame into boiling water and boil for 4 - 5 mins. Drain in a colander. Put back in the cooking pot and add 1 tbls olive oil , toss to coat evenly. Sprinkle with as much salt as you like , mix well so all pods are covered in salt. Pour into serving bowl .
Variation - use a flavored extra virgin olive oil such as lemon or if you like things a little spicy use a good quality chili flavored oil.
