For Dressing :

  • 1 shallot , minced
  • 1 heaping tsp Dijon mustard
  • 2 tsp of Tupelo or Acacia Honey
  • 2 Tbls Balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • Salt and freshly ground black pepper

Place ingredients into a jar and shake until dressing is blended.

For the Salad:

  • 5 cups Arugula
  • 4 oz Goat Cheese
  • 1/4 cup dried Cranberries
  • 1 Tbls chopped Walnuts

In a salad bowl coat arugula with dressing, top with goat cheese , cranberries and walnuts. Lightly toss . Serves 4.
