For each Omelette

  • 3 eggs
  • 1/2 Tbls cold water
  • 1 tablespoons butter
  • salt and freshly ground black pepper
  • 1 tablespoon chopped green onion
  • 1/3 cup crab meat , squeezed dry
  • a few small slice of Brie
  • Chopped fresh parsley

In a small pan , heat 1/2 tablespoon of butter , add green onion and cook for 1 min. Add crab meat and mix with onion. Cook until crab is just heated through about 1-2 mins.

Preheat broiler. Use the method below or your own favorite way of making an omelette. The outcome will be the same.

Whisk eggs with cold water, salt and pepper. Melt remaining butter in a nonstick omelette pan over med-high heat . Pour egg into pan and cook, tilting pan and allowing eggs to run underneath the cooked portion of eggs until almost set. 

Spoon Crab mixture evenly over 1 side of pan. Top with the brie and place pan under broiler until cheese begins to melt , 30 seconds to 1 min. Remove pan from broiler and fold the egg over the side with the crab and cheese. Garnish with a sprinkle of green onion and parsley. Serve immediately.
