The only secret to this sandwich is to use the best ingredients you can find.  Goes great with a nice Chianti .

  • Fresh Focaccia bread
  • Fresh mozzarella cheese
  • Plum tomatoes
  • Fresh basil leaves
  • Good quality Paremesan cheese
  • Crushed red pepper flakes
  • salt and freshly ground black pepper
  • Extra virgin olive oil

Slice the focaccia in half horizontally . Layer mozzarella, slices of tomatoes, basil leaves & shaved parmesean . Sprinkle with salt , black pepper and red pepper flakes. Drizzle with extra virgin olive oil. Top with focaccia slice , brush with a small amount of olive oil. Grill in a panini press , in a grill pan  , or outside on a gas grill until cheese melts and outside is browned with grill makes
