- 1/4 cup salt pork, diced
- 2 tablespoons butter
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 2 tablespoons flour
- 2 cups diced potatoes
- 1/2 tsp thyme
- 2 cups clam juice
- 2 cups minced clams
- 1 cup half and half
- salt and pepper
Over medium heat cook salt pork in a large pot until crispy.
Add butter. When melted add onions and celery. Cook 5 mins. Stir in flour to form a paste . Cook flour for 3 mins , stirring constantly.
Add potatoes, clam juice and thyme. Bring to a boil. Reduce heat and simmer until potatoes are tender, about 10-15 mins.
Add clams and bring to a boil.
Stir in half and half and bring to a boil. Season with salt and pepper.
Serve with oyster crackers.
