If you like a thick , rich tomato sauce you are going to love this. It takes a little work but is so worth it. I use this plain sauce on everything! Goes great on Pasta, Pizza, Chicken and Eggplant Parmesan. I keep some in the freezer for when a recipe calls for a cup of tomato sauce. So put out the red and white checkered napkins and pass the grated cheese.
Put the roasted tomatoes through a food mill , discard the skins . Heat olive oil in a pan and add the garlic and shallots. Cook over medium low heat until fragrant and just beginning to turn color. Add tomatoes, salt , pepper, oregano ans basil . Lower heat and simmer for 1 1/2 hours until sauce has thickened. If you want a thinner sauce you can add a little chicken stock or wine. If you like it a little spicy you can add in a hot pepper when sauteing the garlic and onions or just add some crushed red pepper flakes.
